She Knows & Chicken & Barley Stew

She Knows is a women?s blogging site that is all encompassing and includes entertainment, beauty and love, parenting, home and living, food and health and wellness.? She Knows has listed their favourite Top 10 food bloggers and I was honoured and overwhelmed to be included on their list.

Comfort Food

Today the weather turned for the WORSE and we have had very cold temperatures, gale force winds blowing roofs off houses and sheet-rain.? This called for some comfort food and a few days I saw a great dish I was inspired to cook on a great blog, Claire?s, Claire K Creations.

Cost:? This fed my family for less than $20.00 and there is some left over for lunch boxes tomorrow.

Great on a wet windy night!

Claire cooks this dish in a slow cooker and as the two of us have conversed, I don?t have one.? So I cooked this dish like I would cook a risotto by heating the olive oil in a heavy based saucepan, then adding the onion, garlic, carrot and celery and cooking until tender.? I then added the barley, stirred until combined, threw in the herbs (I used fresh herbs), added the chickened, seasoned, then added the stock.? That?s where the similarity with a risotto ends because instead of stirring until I had an ache in my elbow I put a lid on the saucepan and simmered over a low heat for 40 minutes (checked it after 30 as don?t like to eat burnt food).? I removed the saucepan lid, gave it a good stir, then threw in the chopped parsley.
